The two recipes we offer are

1. Brussels sprouts with cream
Ingredients
- 800 g Brussels sprouts
- 250 ml of cream
- 75 g smoked diced bacon
- 2 cloves of garlic
- 1 pinch of pepper
- 1 pinch of salt
Prep time
Step 1
Peel the garlic cloves.
Step 2
Clean the Brussels sprouts with vinegar water and peel them.
Step 3
Install the KitchenAid beater.
Step 4
Place the bacon bits and crushed garlic using a garlic press in the mixing bowl of your KitchenAid food processor.
Step 5
Set the timer to 3 min, the temperature to 100°C and the speed to mix 1.
Step 6
Replace the beater with the mixer.
Step 7
Add the puffs and crème fraîche to the KitchenAid bowl.
Step 8
Install the splash cover.
Step 9
Set the temperature to 100°C, the timer to 20 min and the speed to mix 3.
Step 10
Serve hot
Note that the cooking time of the cabbages varies according to their size, you may have to vary it slightly. For a lighter dish, you can replace the lardons with bacon and use light cream. 2. Brussels waffles recipe
Ingredients
- 12 g fresh yeast
- 100 g of melted butter
- 250ml hot mineral water
- 260 ml of hot milk
- 300 g flour
- 1 pinch of salt
- 2 eggs
Prep time
Step 1
Put hot water and hot milk in the bowl of the KitchenAid stand mixer. Add your yeast and attach the wire whisk to the multi-purpose stand mixer. Then mix on speed 3 until dissolved. yeast.
Step 2
On speed 3 again, mix the egg yolks until a homogeneous mixture is obtained.
Step 3
Add salt and flour to a second bowl. Set the speed control lever to 2 and blend your dry ingredients. Slowly pour the milk-based mixture into the robot.
Step 4
Add the melted butter and mix for a minute. Set the speed control lever to 4 and mix for 5 minutes until smooth.
Step 5
Beat the egg whites on speed 7 in another bowl until soft peaks form.
Step 6
Set the speed control lever to 2. Then add the batter to the egg whites little by little. Do this until the batter is completely incorporated.
Step 7
Cover your dough with a tea towel and let it rest at room temperature for 30 minutes.
Step 8
Heat the waffle maker to high. Pour 2 ladles of batter into the waffle maker then cook until you have golden waffles.
Step 9
Serve immediately
