In Brussels, the new “smoky cuisine” address, Timber, opened its doors in November 2023, offering a delectable culinary experiencee which skillfully combines the best smoking techniques with seasonal dishes, thus meeting the expectations of vegetarians as well as meat lovers.
Nestled in the heart of the famous Forêt de Soignes, Timber now occupies the place formerly known as Royal Belgian, carefully reimagined by Lionel Jadot and his team. Find Timber on the 2nd floor of mix, Boulevard du Souverain 25, 1170 Brussels.
Chef Olivier Langlet and executive chef Andy Vandegucht invite you to discover a creative cuisine highlighting local and seasonal products, enhanced by the smoking techniques of the “Smoky” smokehouse located on the restaurant’s vast terrace.
That you are vegetable or meat lover, Timber's menu offers a varied choice, ranging from braised eryngii (spinach, onion béarnaise) and seabass fillet or the coucou de Malines marinated for 12 hours and the “red entrecôte de Flandres”. Accompany your meal with a fine selection of wines and cocktails personalized offerings in collaboration with neighboring Roméo, the wine bar run by mixologist Cedric Buscemi.
The original functionalist architecture of the Mix, magnified by unique creations, creates an exceptional atmosphere at Timber. Designed to offer an unforgettable visual experience, the restaurant features elements such as a claustrad bar signed Pierre Culot, an earthen coated wall by Grond Studio, woven metal chandeliers by Adeline Halot, woven leathers by Charles Schambourg, and wood and metal tables by Pierre Emmanuel Vandeputte. The play of light created by the pools of water and the hangings designed by Krjst Studio complete the intimate and subdued atmosphere, adding a touch of mystery.
Timber invites you to a exclusive adults-only dining experience. The restaurant is open for lunch from Tuesday to Friday and for dinner from Wednesday to Saturday, offering seasonal dishes revisited with a smoky touch, accompanied by a refined selection of wines and cocktails.
